The new More Brewing Co. location on 13980 Automall Drive in Huntley, which will open to the public on Feb. 29, eventually is expected to produce over 5,000 barrels of beer a year, a company representative said Tuesday.
More Brewing spokesperson Aaron Keefner said the microbrewery is operating under a brewpub license, which allows the occupant to have a full-service bar.
The license caps production capacity at 5,000 barrels a year but Keefner said the company knows it will not be able to hit that mark in the first year. Because of this, Keefner said More Brewing will be opening under the brewpub license until it can exceed 5,000 barrels a year, at which point staff will work to reclassify to a Class 2 liquor license and drop liquor and wine from the menu.
"It very well could be a few months before we have a consistent schedule as far as brews," Keefner said. "In the mean time, we are going to try to release a beer a week as we did with our Villa Park location. Some beers will see distribution and some will not."
In addition to its beer menu, More Brewing's Huntley location also will offer the same food menu from its Villa Park microbrewery, including nachos, wings, sliders, street tacos, burgers and salads.
Prior to the opening, there will be a ribbon cutting ceremony on Feb. 29 at 10:30 a.m.
"Right now, we are just doing final cleaning and setting of things," Keener said. "There will still be small things that need tweaking, but that's really what soft openings are meant for."
