DeKALB – Pizza lovers in DeKalb soon will have a new option with the opening of Rosati’s Pizza Sports Pub scheduled for this weekend near the intersection of Hillcrest Drive and North Annie Glidden Road.
Co-owner Arturo Carlos said Thursday that the business is set to open Saturday at 930 Pappas Drive, with hours from 10:30 a.m. to midnight Fridays and Saturdays and 10:30 a.m. to 11 p.m. Sundays through Thursdays.
Crews have been at the site this week working to put the finishing touches on the inside of the sports pub.
The pizza franchise will occupy the space that was home to Rosy’s Roadhouse from 2013 to 2015. Before Rosy’s, the bar was operated under different owners as Starbusters Bar & Grill.
Another local Rosati's franchise is at 630 Plaza Drive in Sycamore. The new DeKalb location will be one of nearly 80 Rosati's in Illinois and more than 200 nationwide, according to Rosati's website.
Husband-and-wife owners Arturo and Sandra Carlos also operate Rosati’s franchises in Montgomery and Oswego. The couple lives in Plainfield.
Arturo Carlos said they wanted to bring Rosati’s signature recipes to DeKalb, and they are looking forward to being part of the community.
The DeKalb City Council approved a liquor license for the business in April under conditions that the owners complied with certain measures, including completion of all required build-out plans and obtaining police and fire department approval on signage, access and safety issues.
The Carloses’ new restaurant will offer customers a full-service bar along with carry-out, dine-in and delivery options.
Plans for the Rosati’s layout were proposed as a “sports-bar pizzeria” with TVs and table configurations similar to a Buffalo Wild Wings, according to city documents.
The first Rosati’s opened in 1964 in a Chicago suburb. Today the menu consists of various types of pizza including Chicago-style deep dish as well as wings, pastas, salads, sandwiches and more.
