BROOKFIELD – Mary Shengoz’s Brookfield restaurant has been such a hit, she’s getting ready to expand.
Shengoz, owner of Mary’s Morning Mix Up, 9132 31st St., is opening a second restaurant in the Eight Corners neighborhood to keep up with the demand for what she can dish out best – breakfast and lunch.
However, Shengoz has a bakers thumb, and the second location, the former Giron’s Ristorante at 9110 Broadway Ave., has 8,000 square feet – plenty of room to set up a bakery and catering operation in the basement, too.
Shengoz purchased the building and said she will present her design plans to the Brookfield Zoning Board of Appeals for approval by the end of March.
Shengoz took over the restaurant on 31st Street in January 2014 and never looked back.
“We’ve outgrown it; it’s too small,” Shengoz said Friday. “On the weekends, people would call me and say, ‘there’s no place to park!’”
Parking was not the only space problem. Shengoz said she would have to shop for supplies and food stuff daily because of the lack of refrigerator and storage space.
“There’s unlimited parking at the new location,” she said. “As much as I thought where we are was a great location, there’s so much more foot traffic [at the new place].”
Shengoz’s plans call for a complete gutting of the building and starting from the ground up. Once completed, Shengoz will have to get used to having up to 100 customers at a time, instead of the maximum 40 she now deals with daily.
As for the 31st street location, she has no plans to shut the doors. Instead, Shengoz said there’s definitely a need for a place to get a good taco or burrito and get it fast.
“We’ll turn the current location into fast food, mostly Mexican,” Shengoz said. “There’s no good burrito or taco place in town, so that’s our goal to be that right here.”
The new diner location is expected to be open in June, Shengoz said.
“It will be an exciting move,” she said. “I can’t wait.”
