ELBURN – Amin Kanchwala is bringing Rosati's Pizza back to Elburn.
Kanchwala, 24, is a St. Charles resident and a former student in the Kaneland school district. He owns another Rosati's location in Coal City. His father owns Chicago Pizza in Batavia.
He said he has wanted to own a Rosati's closer to home, and he had been watching the Elburn location, which is at 860 N. Main St., in the same shopping center that houses Jewel. The previous owners of the Elburn Rosati's closed the restaurant during the summer. Kanchwala said he is eager to build up the Rosati's brand in the village. The Elburn location opened under its new management on Dec. 5.
"Our product here is going to be better than it was before," Kanchwala said.
He said the establishment has been fully remodeled. The location features a dining area, as well as TVs and a Chicago sports theme.
"All of this is new," Kanchwala said.
Eventually, he said he would like to have a larger dining area, "a really nice one."
"What I really want to do is have a sports pub in this town," he said. "It would be very nice."
In the meantime, he said he will focus on "promoting the brand." Also, he will offer delivery service from open to close each day. The eatery's opening gives Elburn three pizza restaurants, as Rosati's joins Shore Louie's and Paisano's. Kanchwala said there will be enough business for all three.
"If you have a good product and good service, it will show itself," he said.
