It’s hard; people have to choose what their priorities are. But this is a very worthwhile cause. And it’s really needed.”

Eck said the fundraiser offers a variety of sponsorship tiers, including the very affordable white sponsorship ($25) and blue sponsorship ($50).

Raffles are streamlined this year, so each ticket holder has only one number to check, regardless of the number of tickets purchased.

Tickets for golf and dinner are $165. He is sweet, playful, affectionate and full of energy. Rhett loves everyone he meets and gets along wonderfully with kids, other dogs, and even cats. He’s up for playtime in the yard, family adventures and cuddling at the end of the day. Rhett needs a family committed to helping him learn and grow. To meet Rhett, email Dogadoptions@nawsus.org. Visit nawsus.org.

Moonshine is a 1-year-old sweet and loving petite tabby. She absolutely loves people and follows them around. She’s still learning to get along with other cats, so she must be the only cat in the home. Moonshine is curious and loves to explore, but she also loves comfortable beds and midday naps. She enjoys receiving pets and attention from visitors and volunteers. To meet Moonshine, email Catadoptions@nawsus.org. Visit nawsus.org.

Pixie is a 2-year-old, 12-pound terrier mix with lots of personality! Pixie came to the shelter after being found as a stray and never reclaimed. She enjoys hanging out with people and playing with toys. Pixie gets startled by fast movements and grabbing hands, so she needs a home with older children and people who understand terrier quirks. She’s not a fan of other dogs and must be the only pet in the home. To meet Pixie, visit willcountyhumane.com and follow the instructions for the adoption process.

Cricket is a sweet 1-year-old tabby who was returned to the shelter due to unforeseen circumstances in the home. He loves attention and playing. Although Cricket lived with his sister Bumblebee, they didn’t really cuddle or play together. So Cricket may do well with another independent cat. To meet Cricket, visit willcountyhumane.com and follow the instructions for the adoption process.

Liz Phair. is smart, vocal and playful. She wants to be part of everything and isn’t shy about sharing her opinions. Liz loves cats, does well with dogs, and behaves wonderfully with kids. She’s playful, social, and endlessly entertaining. To meet Liz Phair, visit thekittysquad.com/adoptables.

Honey is gentle, calm, affectionate and always happy to receive pets and treats – two of her favorite things. Honey enjoys spending time with people and can coexist with other cats if they respect her space. Honey does well with dogs and kids, but she would also do well as an only pet in the home. She loves watching the world from a sunny window. Honey will make a mellow, loving companion. A small hot dog and beef sandwich shop in downtown Joliet.

Romero said she attended workshops and panel discussions on how to open a business and “listened to the journey of other entrepreneurs to learn from their struggles and accomplishments,” she said.

Her business advisor at JJC helped her write a business plan and then she worked with Huntington Bank and the Small Business Administration to make “her dream a reality,” she said.

But that dream didn’t work out, Romero said.

“I still wanted a hot dog business, so I went back to the drawing board with my JJC advisor and pivoted my business plan to a food truck,” Romero said.

Zolecki said food truck owners need to understand business law, accounting and finance.

“All these things collectively lead to success or failure,” Zolecki said.

Howard, who supplemented her income stream with a food truck when she owned TCBY Shorewood, said running a food truck business without supplemental income is challenging.

“Summer and fall are the best times of the year for your food truck,” Howard said. “What are you going to do in the winter?”

Romero, who also works another job, said she didn’t know she couldn’t just park somewhere and sell food.

“I found out you need permission from the store owner or their corporate office,” Romero said. “and they sometimes will charge a fee to park there.”

Jamie Littell, owner of Moe Joe’s in Plainfield, said she bought the food truck during the COVID-19 pandemic “just to get out and have fun.”

“The food trucks saved us,” Littell said. “It cheered us all up, just to see the long lines of people laughing and smiling and enjoying your food.”

Because Zolecki’s corporate job is the family’s financial anchor, Smokin Z operates as a “separate, independent entity,” Zolecki said.

“We don’t draw anything from it. We don’t need to,” Zolecki said. “Businesses typically fail when they try to draw too much out of it. You need to keep building that pyramid, and build in those cash reserves and manage cash flow.”

The price of the food truck can be “hefty” – and wrapping the outside with logo and design can also be expensive, depending on the level of detail, Howard said.

But the cost is worth it, Romero said as she’s received many compliments on her trailer.

“I think people love the big window and can see in and watch their food being made,” she said.

Once the truck is operational, “solvency is key,” Zolecki said.

Although Smokin’ Z has only raised prices twice in 13 years and prides itself on being “fast, high-quality and always affordable,” owners must understand their costs when setting prices, he said.

Costs include food, event fees, gas and maintenance, employee payroll, and charging the appropriate tax rate for each municipality, Zolecki said.

Littell said each municipality, each health department and each festival organizer also charge fees, with no reciprocity among them.

Howard said fees can range from “a couple hundred dollars to $1,500 for one event.”

Zolecki said food trucks are “getting hit left and right with increased fees” – with some events tripling in price.

“Everybody has their hand out for a piece of the pie,” he said.

But Illinois House Bill 1052 – the Food Truck Freedom Act – “would support food trucks not getting dinged” by paying separate fees for each town it visits, Zolecki said.

Food truck owners need to determine “which events suit you best for your product,” Howard said.

Because “you can make a lot of money” at the right festival or party, Littell said.

“But if it rains, you’re out thousands,” Littell said. “The fees are not refundable. So you’re definitely gambling every single time.”

Zolecki said owners should “listen to their business” when managing operations, growth and expenses.

For instance, Smokin Z’ is doing fewer festivals and more corporate events due to market saturation and event planners overbooking trucks.

To stand out, food truck owners must be “really creative with their product,” Howard said.

“And have a novelty,” Howard said. “Set yourself apart from other food trucks.”

Zolecki said people don’t understand what’s involved when they ask, “Can you just come park the food truck and sell food to my guests?”

But three hours of serving food to 10 guests still means hours of buying food, stocking the truck, preparing food, cooking food and then cleaning up after the event, as well as paying employees, Zolecki said.

However, Littell said in certain circumstances – such as a dedicated customer’s birthday party – Mojoe’s will bring out the food truck.

“You totally will lose money,” Littell said. “But it’s advertising and is loyalty and it’s camaraderie and I just appreciate the fact they want us there.”

Absolutely, Littell said.

“It’s totally worth it,” Littell said. “As a team, we love – we literally love – to serve people. We love the smiles on people...nothing makes us happier than people who really, really want us there."

Making people happy is a big reward, Romero said. She said people thank her for making delicious Chicago-style hot dogs and post photos to social media

“It makes me feel so good to be able to provide a quick and affordable meal that people are enjoying,” Romero said.

Zolecki said renting kitchen space to other food businesses helps both with expenses.

“We’re very proud of what we built,” Zolecki said. “We’re very humble and willing to help other people.”

Customers line up to buy food from Patti Wagon Hot Dogs & More at The Vintage Faire in Minooka, on Sunday, May 31, 2026.

Will County Pets of the Week: June 1, 2026

Denise Unland

Read the description of each pet to learn about it, including where it can be adopted in Will County.

The Herald-News presents this week’s Pets of the Week.

Read the description of each pet to learn about it, including where it can be adopted in Will County.

Brittany is an 18-month-old, 45-pound lab/hound mix that was rescued from euthanasia. I’d had no idea how to get into a childcare center.”

JJC recently grew its apprenticeship program by expanding its partnership with Catholic Charities, Diocese of Joliet’s Head Start program that offers childcare and education services on JJC’s Main Campus.

Under the expanded partnership, JJC’s child development program will also refer specific students for apprenticeships at Catholic Charities’ Head Start’s five centers in Will County and its two partner sites, according to Maggie Snow, director of communications for Catholic Charities, Diocese of Joliet.

“An apprenticeship is the ideal learning environment to prepare for a career,” Snow said. “Around 30% of our early childhood staff was educated at JJC. This is a great collaboration that will help prepare students to work in early childhood education and childcare and help Catholic Charities recruit great talent.”

Julie Brancaleon, apprenticeship coordinator at JJC, said Head Start is a quality program that’s “been around a long time with great results. And it’s very invested in the apprenticeship program. They want to see it succeed; they want to see our students do well and become good teachers for them.”

Other apprenticeship employers include Kid Country Childcare in Manhattan, Kiddie Academy in Lemont and New Lenox, KinderCare Plainfield, KLA Schools in west Naperville and Plainfield, Learn with Me Daycare in Plainfield and Step by Step Child Care Center in Diamond, Morris and Shorewood.

Kathy Fudge-White, director of the early childhood services for Catholic Charities in Joliet, said the apprenticeship program allows early childhood education students to engage with children under the direction of a mentor teacher while attending classes at JJC.

The Joliet Catholic Charities will employ these students at $17 an hour. The students may work up to 28 hours per week, she said.

Dain Meza-Gotto, director of workforce development at JJC, said interest in developing this apprenticeship program began in 2020 and was quickly shelved due to the COVID-19 pandemic.

The “group of faculty really passionate about it” regrouped in 2022, resulting in the Department of Labor approving and registering the program in 2024, Meza-Gotto said.

Melissa Szymczak, child development program coordinator at JJC, said the industry had lost many teachers when centers closed or limited enrollment during the pandemic.

So faculty wanted to address teacher shortages by bringing “more people into the field of early childhood education with a strong start,” while offering them mentors, role models and a “college career path that is clear and seamless,” Szymczak said.

Brancaleon said she recruits the students, finds them a place in the program and monitors their progress.

Each partner employer has a journey worker on-site, which is an employee of the partner site who monitors progress, serves as the student’s mentor, and updates JJC, she said.

Floyd appreciated the support.

“I had someone to help me reflect on my teaching and offer me guidance from the very beginning,” Floyd said. “I never had to ask for feedback.”

Most apprentices take the program very seriously, she said. “It’s not easy to go to work and go to school,” Brancaleon said.

The employment is separate from the coursework. If apprentices stop taking classes, they may keep working for the employer, she said.

Some students decide – once they’re in the program – working in a childcare center isn’t for them, Brancaleon said. So they’re able to exit before “spending all their money on books and classes,” she added.

“One of my apprentices said, ‘I don’t want to do this anymore,’ and went into nursing,” Brancaleon said.

After completing the apprenticeship, students could work as a lead teacher in a qualified childcare center, Szymczak said.

They may stay with the employer and many do, Brancaleon said.

“It’s hard to find employees who want to do these kinds of jobs,” Brancaleon said. “The job force is sort of compromised after the COVID shutdown and restarting. We’re building up the workforce with very well-educated employees.”

“Unlike other jobs, when your job is in early childhood education, you’re working with children from day one,” Szymczak said. “You’re working with preschoolers; you’re working with 2-year-olds.
